Mix up some ordinary sponge cake mixture, maybe with slightly less sugar than usual. Add a layer of cake mix, then a small teaspoon of strawberry jam to each cake case. Finally cover the jam with another layer of cake mixture. Be careful to get the jam in the centre or it will spread to the sides. Bake. Dust icing sugar on the top or eat with clotted cream for a fluffier alternative to scones.
